Ingredients

6 cups onion, chopped

6 cups celery, chopped

6 cups parsley, chopped

½ pound pork sausage

1 tbsp salt

1 tbsp poultry seasoning

11 oz bag of bread crumbs

Preparation

Step 1

Sauté the onions, celery, and parsley. Set aside.

Step 2

Boil the turkey neck, tail, gizzard, and heart for several hours, reducing the stock to 1 cup.

Step 3

Place the stock in a frying pan. Add the sausage and crumble. Add the salt and poultry seasoning and mix well.

Step 4

In a large bowl, place the bread crumbs, celery-onion-parsley mix, stock and sausage. Toss well.

Step 5

Pat the inside of the turkey dry and salt well. Stuff the turkey with the dressing mix and cook according to your turkey recipe.
