Ingredients
1½ lbs potatoes
½ cup green pepper, chopped and deseeded
½ cup red pepper, chopped and deseeded
½ cup black olives, chopped and pitted
2 green onions, sliced
½ cup olive oil
¼ cup spicy brown mustard
3 tbsp lemon juice
½ tsp salt
1 tsp oregano
⅛ tsp pepper
Preparation
Step 1
Quarter the potatoes and cook in boiling water until tender , ~10 minutes. (The potatoes do not have to be peeled).
Step 2
Place cooked potatoes in a bowl to cool, and add the green and red peppers, olives, and green onions. Mix thoroughly.
Step 3
Make the dressing. In a mixing bowl, add the olive oil, mustard, lemon juice, salt, oregano, and pepper. Mix thoroughly.
Step 4
Pour the dressing over the potato mixture and serve.
