Ingredients
1½ lbs unpeeled red potatoes
½ cup chopped green pepper
½ cup chopped red pepper
½ cup chopped yellow pepper
½ cup chopped celery
½ cup black olives, pitted and halved
¼ cup parsley, chopped
2 green onions, sliced
½ cup olive oil
¼ cup spicy brown mustard
3 tbsp lemon juice
1 tsp oregano
½ tsp salt
⅛ tsp pepper
Preparation
Step 1
Wash and quarter the potatoes. Cook in boiling water for ~10 minutes or until tender. Drain.
Step 2
Add potatoes to a mixing bowl and stir in the peppers, celery, olives, parsley, and green onions.
Step 3
Make the dressing. In a separate bowl, mix together the olive oil, mustard, lemon juice, oregano, salt, and pepper.
Step 4
Pour the dressing over the potato mix and toss gently. Serve immediately or refrigerate until ready to eat.
