Ingredients

½ lb fussilli pasta

7 tbsp olive oil

11 sundried tomatoes, chopped

1 lb fresh tomatoes, chopped

¾ cup kalamata olives, pitted and roughly chopped

1 lb feta (or mozzarella) cheese, cubed

2 tbsp red vinegar

1 clove garlic, minced

2 tbsp capers, drained and chopped

1 cup parmesan cheese

1 cup parsley, chopped

Preparation

Step 1

Cook the pasta per package instructions along with 1 tbsp olive oil. Drain, set aside, and let cool.

Step 2

Once the pasta is cooled to room temperature, add 6 chopped sundried tomatoes, the fresh tomatoes, olives and feta (or mozzarella) cheese to the bowl and mix well.

Step 3

Make the dressing. Whisk together 6 tbsp olive oil, 5 chopped sundried tomatoes, the red vinegar, capers, parmesan cheese, and parsley. Refrigerate until ready to serve.
