Ingredients
8 medium potatoes
4 celery stalks, finely chopped
~8 sprigs of parsley, finely chopped or cut with scissors
2 medium red onions, thinly sliced
4 tsp sugar
1 tsp salt
Onion salt to taste
10+ tsp vinegar
Vegetable oil
Preparation
Step 1
Refrigerate potatoes and cool for ~45-minutes.
Step 2
Make the dressing: into a 1 cup measuring cup add the sugar, salt, onion salt, and vinegar then stir well. Add enough vegetable oil to make 1 full cup, and stir well.
Step 3
Slice the potatoes into ¼ inch sections.
Step 4
Add one layer of potatoes to a casserole dish and sprinkle them with salt and pepper, celery, parsley, and onions. Continue adding 3 or 4 more layers like this.
Step 5
Stir the dressing and pour it over the potatoes. Stir very gently, taste, and add more salt and/or vinegar, if desired.
Step 6
Cover but do not refrigerate overnight.
