Ingredients
1 sweet potato
3 carrots
1 apple
½ onion
2 chicken breast halves
2 tbsp barbecue sauce
1 cup cranberries
Preparation
Step 1
Halve the sweet potato and add it to a microwave safe bowl. Add ½ inch of water to the dish and microwave on high for 10 minutes.
Step 2
Chop the carrots, apple, and onion. Mix together and spread across the bottom of a greased baking dish.
Step 3
Cover the chicken in barbecue sauce and place them on top of the vegetable mix.
Step 4
Chop up the cranberries and sprinkle over the top of the chicken.
Step 5
Bake at 375-degrees for 50 minutes. Serve hot.
