Ingredients
2 boneless skinless chicken breasts
¼ pound Swiss Cheese, cut into 8 slices
½ pound cooked ham, cut into 8 slices
Fresh tarragon, finely chopped
~¼ cup All purpose flour
~1 cup bread crumbs
1 egg
Toothpicks
Salt and pepper to taste
Preparation
Step 1
Place chicken breasts on wax paper and pound each with the flat side of a cleaver or butcher’s knife until they’re ~¼ thick.
Step 2
Place 2 strips of ham and cheese on each chicken breast, sprinkle with tarragon, and salt and pepper to taste.
Step 3
Roll up each breast with the ham and cheese in the middle, holding them together with toothpicks.
Step 4
Whisk together the egg and flour, spread on the top and sides of each chicken breast (but not the bottom!), then sprinkle bread crumbs over each and chill them thoroughly (~30 minutes) in the refrigerator.
Step 6
Bake for 25-30 minutes at 375-degrees or until each side is golden brown and tender. Drain on a paper towel and serve on a warm platter.
