Ingredients
~2¾ cups all purpose flour
1 tsp salt
1 tsp baking powder
2 tsp baking soda
¾ cup unsweetened cocoa powder
3 cups sugar
1 cup vegetable oil
1 cup hot coffee
2 cups milk
2 eggs
2 tsp vanilla extract
½ cup butter, softened
½ cup shortening
Preparation
Step 1
Sift together the dry ingredients in a mixing bowl.
Step 2
Add the oil, coffee, 1 cup of milk, 1 tsp vanilla, and eggs and mix at a medium speed or by hand for ~2 minutes or until well blended.
Step 3
Pour mixture into 2 greased and floured 9” x 1½“ cake pans. Bake at 325-degrees for 25-30 minutes, and then cool for 15 minutes on a wire rack.
Step 4
Make the icing. Combine 1 cup of milk with 5 tbsp flour in a sauce pan and cook until thick. Cover and refrigerate.
Step 5
In a mixing bowl, beat the butter, shortening, 1 cup sugar, and 1 tsp vanilla until creamy. Add chilled milk and flour mix and beat for 10 minutes or until smooth. Frost the cooled cake and enjoy!
