Ingredients

Cake:

2 cups flour

2½ tsp baking soda

1 tsp salt

2 tsp cinnamon

1 cup vegetable oil

2 cups sugar

3 eggs

1 can crushed pineapple (8oz), drained

2 cups carrots, grated

1⅓ cup coconut

1 cup chopped nuts (optional)

Frosting:

3 oz cream cheese

1 tsp vanilla extract

¼ cup butter

3 cups powdered sugar

~2 tbsp milk

Preparation

Step 1

Mix together all of the dry ingredients in a large bowl.

Step 2

In a separate bowl, beat together the oil, sugar, and eggs. Fold this into the flour mixture and blend well.

Step 3

Add the rest of the ingredients and mix well.

Step 4

Bake in a preheated 350-degree oven for 45 minutes.

Step 5

While the cake bakes, make the frosting. Add the cream cheese to a bowl, then fold in the butter and vanilla. Cream in the sugar and milk. Mix well and spread across the cake once it has cooled to room temperature.
