Ingredients
1 cup shortening
1 cup brown sugar
2 eggs
1 cup molasses
2 tbsp apple cider vinegar
4 cups flour
1 tbsp ginger
1 tbsp baking soda
½ tsp baking powder
1 tsp salt
Preparation
Step 1
Cream shortening and brown sugar until light. Beat in eggs one at a time, beating well to blend. Add molasses and vinegar, and mix.
Step 2
In a separate bowl, stir together the flour, ginger, baking soda, baking powder, and salt. Stir this into the batter. (Add more flour as needed to roll).
Step 3
Roll out dough and cut into 2 or 3 inch circles. Add to a baking sheet.
Step 4
Bake at 375-degrees for 6-8 minutes (Do not overbake!). When cool, frost with vanilla frosting.
