Ingredients
2 cups flour
1 cup sugar
3 tsp baking powder
½ cup shortening
2 eggs
1 cup milk
1½ cups blueberries
1⅓ cups coconut
Preparation
Step 1
Sift together the flour, sugar, and baking powder in a large mixing bowl.
Step 2
Cut in the shortening to the mix.
Step 3
Stir in the eggs and milk.
Step 4
Fold in the blueberries and coconut, saving some of the coconut.
Step 5
Divide the batter into two 9” layer cake pans, and sprinkle the top of each with coconut.
Step 6
Bake in a preheated 375-degree oven for ~25 minutes. Cool on rack.
