Ingredients

2 cups fresh blueberries

2 tbsp lemon juice

3 tbsp shortening

¾ cup sugar

1 cup flour

1 tsp baking powder

¼ tbsp salt

½ cup milk

1 cup sugar

1 tbsp cornstarch

¼ tsp salt

1 cup boiling water

Preparation

Step 1

Place the berries in the bottom of a greased 9” pan; sprinkle with lemon juice.

Step 2

Cream together the shortening and ¾ cup of sugar. Combine the flour, baking powder, and ¼ tbsp of salt, stir and add alternately with the milk. Spread this batter over the blueberries.

Step 3

Combine the 1 cup sugar, cornstarch, and ¼ tsp salt. Sprinkle this mixture over the batter and blueberries.

Step 4

Pour the boiling water over the mixture but do not stir! Step 6 Bake at 375-degrees for 40-50 minutes. Cool on a wire rack before serving.
